Kitchen & Table Fishery by Marcus Samuelsson
Last summer (2019) Marcus Samuelsson opened Kitchen & Food Fishery in Oslo. Nina had previously visited his restaurant Red Rooster Harlem in NYC, and we were eager to try out the newcomer in Oslo.
When we found a special offer from Nordic Choice Club, three courses for 395 NOK we decided it was time to go.
The restaurant is located in a hotel close to the new Munch Museum in Oslo (or the ugly mastodont as we call it). In the hotel lobby you can study an authentic Munch painting on loan from the museum. The painting is changed ever so often, so you´ll have to go down there yourself to see what they have now.
Unfortunately, the restaurant was rather empty this evening, and we learned that this was due to the corona-virus that had caused a large decrease in the number of tourists from Asia. The upside with an empty restaurant is that you get the waiter’s complete attention, and they were very nice and professional.
Our menu consisted of mild gravlax with estragon spuma, pickled onion, and cucumber. This was a tasty, fresh and colorful dish. The cucumber was surprisingly crunchy, estragon spuma was a perfect match for the salmon and the pickled onion tasted like candy!
Next up was a fresh cod with mussel foam, decorated with carrot puree, pumpkin and pickled onion. We had hoped that they served skrei, as this was in season. The cod was good, but we think skrei would have been even better, juicier with a more firm texture.
Our waiter recommended a bottle of dry Chardonnay (Bouchard Macon-Lugny) and we shared this for the entire meal. This was a good match for the food.
A light dessert was the perfect ending for a nice and quiet Saturday night dinner. Sour creme mousse and a vanilla ice cream with apple syrup. Happy and satisfied we left the still empty restaurant, heading home to watch the latest John Wick movie.
